Healthy Classic Meatloaf Recipe…. You’ll Never Know Its A Healthy Option

I am trying to start off the New Year with healthier options of my families favorite meals. That is how I came across this delicious recipe from Yummy Healthy Easy. At first,I was a little worried that they weren’t going to like the healthier meatloaf option. Boy was I wrong. They didn’t even realize that it had oatmeal in it. This recipe tastes good and its easy to make. But, it does have kind of a weird texture. I think next time I’m going to try it with soda crackers. 

I gather all the ingredients I am going to need for the recipe. Like I mentioned in past articles. I find it much easier to do it like this so I don’t have to run around the kitchen looking for stuff.

Mix together ground beef, onion, eggs, pepper, oats, Worcestershire sauce, garlic salt, onion salt and tomato sauce in a large bowl.

Mix it using your hands. Do not overmix.

Place in a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish.

In a small bowl,(I just used a measuring cup)combine the ketchup, sugar and mustard.

Spread on top of meatloaf and place in oven. Bake for 1 hour and 15-30 minutes, or until meatloaf is cooked through.

 

Let cool for a few minutes and then serve with your favorite sides. I choose a baked potato and vegetable medley. Enjoy!

Yields: 6-8  servings

Ingredients: 

Meatloaf:
2 pounds lean ground beef
1 onion, diced small (about ½ cup)
2 eggs
½ tsp. ground pepper
¾ cup quick oats
1 Tbsp. Worcestershire sauce
1 tsp. garlic salt
1 tsp. onion salt
½ cup tomato sauce

Glaze Topping:
¼ cup ketchup
¼ cup brown sugar
2 tsp. mustard

 

Instructions:

1.  Preheat oven to 350ºF. Spray a 9×5″ loaf pan with cooking spray.
2. Mix together ground beef, onion, eggs, pepper, oats, Worcestershire sauce, garlic salt, onion salt and tomato sauce in a large bowl, using your hands. Do not overmix.
3. In a small bowl, combine the ketchup, sugar and mustard. Spread on top of meatloaf and place in oven. Bake for 1 hour and 15-30 minutes, or until meatloaf is cooked through. Let cool for a few minutes and then slice and serve. Enjoy!
