Huevos Con Tortillas (Tortilla With Eggs)

Tortilla con Huevo is crisp, golden fried corn tortilla scrambled with eggs.  My husband grew up on this meal for breakfast in Nicaragua and now we make it for our girls. They love it. Its simple and delicious. That’s probably why its also my favorite.

I gather all the ingredients I am going to need for the recipe. like I mention I find it much easier to do it like this so I don’t have to run around the kitchen looking for stuff. Especially in the morning when I am half asleep.

Cut the corn tortillas into bite-size squares.

Heat 1/4 cup of vegetable oil in a large non-stick skillet over medium-high heat.  Add the tortillas and fry them in the oil until crispy and light golden brown, stirring occasionally so the tortillas don’t burn. Add salt to taste.

While the tortillas are cooking.Whisk your eggs together in a bowl

When the tortillas are crispy and lightly golden. Pour the eggs over the tortilla and continue to cook until the eggs are fully cooked, stirring occasionally to prevent eggs from burning or sticking to the pan. 

 Can be served with your favorite salsa, hot sauce and/or a dollop of sour cream. Enjoy!!!

Yield: 4 servings

Ingredients:

10 corn tortillas

1/4 cup vegetable oil (for frying)

8 large eggs

Salt (to taste)

 

Directions:

1. Cut the corn tortillas into bite-size squares.

3.  Add the tortillas and fry them in the oil until crispy and light golden brown.

4. Whisk the eggs in a large bowl.

5. Pour the eggs over the tortilla and continue to cook until the eggs are fully cooked.

6. Serve with your favorite salsa, hot sauce and/or a dollop of sour cream. Enjoy!!!
